This recipe features the Cantanzaro Herbs, found locally at Savory Spice Shop in downtown Franklin. Cantanzaro Herbs is handcrafted from garlic, lemon peel, marjoram, European basil, Mediterranean thyme, rosemary and Greek oregano. When it comes to Italian food, there isn’t any dish that couldn’t use this full flavored blend. Perfect on pasta and in tomato based sauces. Try on vegetables, chicken, scrambled eggs or omelets and fish. Use it to spice up pizza or as a great finishing touch to salads.

- 3 to 4 pound whole chicken
Choose one of the following salt-free seasonings:
- 2 to 3 Tbsp. Bohemian Forest European Style Seasoning
- 2 to 3 Tbsp. Cantanzaro Herbs
- 2 to 3 Tbsp. Summit County Seasoning
- 2 to 3 Tbsp. Mt. Evans Butchers Rub
- 2 to 3 Tbsp. California Citrus Rub
Remove giblets and pat chicken dry with paper towel. Rub chicken thoroughly with seasoning of choice, sprinkling some inside the cavity as well. Set chicken in a slow cooker and cook on high for 3 to 4 hours, or until internal temperature of chicken reaches 165 to 170 degrees. Carefully remove the chicken to a platter (it will be so tender that it should be falling apart off the bone), cover with foil and allow it to rest 5 to 10 min. before carving and serving. While chicken is resting, pour the juices from the slow cooker into a small saucepan and simmer for 5 to 10 min. to reduce and serve on the side as a sauce.
This was designed as a salt-free recipe, but salt can be rubbed on the chicken with the seasoning and/or added to the finishing sauce. You could also brine the whole chicken, if desired, using Savory’s Brining Mix. Find Brining Mix Instructions here.
Serve over rice or noodles or use in enchiladas, soup, or on salads. Add your favorite root vegetables like potatoes, carrots, or onions to the crockpot with the chicken at the beginning to add flavor and a built-in side dish!
