A lard pan stored under a stove shelf was covered in mice feces. Packaged corn husks had visible black residue buildup (repeat violation). Two pans of cooked rice and one pan of chorizo were stored in the make line cooler at an ambient temperature of 53°F — well above the required 41°F. A chemical spray bottle was stored on the active make line shelf among dry goods (noted on 3 consecutive inspections). No thermometer was present inside the make line cooler. Employee drinks with open lids were stored on active coolers. A flat plate without a handle was used as a scoop in cooked rice.
